- Glaze and bake. Whisk the tomato paste, mustard and vinegar together and brush half of it over the loaf. Bake 35 minutes, brush on the rest, then bake 15 to 20 minutes more until the centre reads 160 °F (71 °C), the FDA safe minimum for ground meat, and the glaze has darkened at the ridges.
- Rest before slicing. Leave it 10 minutes on the pan. Cut too early and the juices run out and the slices crumble.

Practical cooking tips
- Overworking the mix is the usual failure. A keto meatloaf has no breadcrumbs to keep it open, so compacting it has nowhere to hide. Stop as soon as it coheres.
- Use the thermometer, not the clock. Loaf thickness varies more than oven temperature, and 10 degrees past 160 °F is the difference between juicy and dry.
- Glaze in two coats. All of it at the start burns before the centre is cooked; all of it at the end stays raw and sharp.
- Do not use 90% lean beef. Without the rendered fat the loaf tightens badly, and there is no starch here to compensate.
